1 1/2 pounds tilapia fish fillets

11/2 tsp. grated orange peel

1/2 tsp. grated lime peel

1/2 tsp. grated lemon peel

1/4 tsp. Jamaican jerk seasoning

4 orange slices

4 lemon slices

Salt and pepper

Ground nutmeg

1. Preheat oven to 400° F. Place fillets in a lightly buttered baking dish. Sprinkle with salt and pepper, nutmeg and jerk seasoning. Sprinkle with citrus peel on top and cover with foil.

2. Bake for 15 minutes, or until internal temperature at the thickest part of fillets is 145° F. Garnish with fresh orange and lemon slices.

Makes 4 servings.


1 Pound of Mountain Stream Tilapia Fillets makes 2 servings



Place fish in glass dish. Coat fish with 1/2 cup of your favorite marinade, let stand for 30 minutes. Place fish on hot, oiled broiler pan or grill and cook for 5 minutes, turn and cook 5 minutes until fish flakes. Serve with lemon of lime wedge.


Coat fish with flour, season with salt, pepper and paprika. Heat 1 Tbsp. margarine, 1 Tbsp. white wine Worcestershire sauce and 1/4 Tsp. Tabasco sauce in skillet over medium heat. Cook fish 5 minutes, turn and cook 5 minutes longer until fish flakes. Serve with lemon wedges.


Place fish in a microwave dish. Brush fish with 1/4 cup of tartar sauce, sprinkle with 1/4 cup bread crumbs mixed with 1/2 Tsp. of pepper and 1/2 Tsp. of paprika. Cover, microwave on "HIGH" 6-7 minutes until fish begins to flake. Let stand 5 minutes. serve with lemon wedges.
